Vasilopita
Made with Self-Rising Flour
Ingredients:
- 3 Cups Self Raising Flour Triumph
- 1 ½ Cup of Sugar
- 4 Eggs
- ¾ Cup of Oil
- ¾ Cup Melted Butter
- 1 Teaspoon Vanilla
- ¾ Cup of Orange Juice
- ¼ Cup of Cognac
- 2 Teaspoons Baking Powder
- Finely Chopped Almonds
- Icing Sugar
Method:
In a bowl, beat the eggs with the sugar in a fluffy mixture.
Add the oil, melted butter and vanilla.
Gently add and mix the orange juice, cognac, flour and baking powder into the mixture.
Put the mixture in a buttered and floured round mould and sprinkle the edges with almonds.
Finally, throw a coin in the mixture after we wrap it well in foil.
Bake at 175°Ⅽ for 45 minutes or until golden brown.
Allow to cool before removing it from the mould and sprinkle the surface with icing sugar.
