Flaunes
Ingredients:
Dough- ½ kg Village Flour Triumph
- ½ Glass of Oil
- 1 Teaspoon Baking Powder
- 3 Mechlepi Grains
- 3 Mastic Grains
- 1 ½ Glass of Warm Milk
- ½ kg Cheese for Flaunes
- ½ Cup Village Flour Triumph
- 2 Teaspoons Baking Powder
- 3 Eggs
- 2 Spoons of Sugar
- 3 Mechlepi Grains
- 3 Mastic Grains
- Mint
- Raisins
- 250g Sesame
- 1 Egg
Method:
We cut the cheese into small pieces and freeze it in the fridge from the night before.
Stuffing
Grate the pieces of cheese in a bowl and mix together with half a cup of flour.
Then, we put the ground grains of mechlepi and mastic.
We break and beat the eggs and mix them with the mixture. If the filling becomes too thick, break another egg and mix again.
Finally add the raisins, mint, baking powder and sugar and mix well.
Dough
Mix the flour and the glass of oil.
Then add 2 teaspoons of sugar and 2 tablespoons of baking powder. Add the warm milk slowly so that we have a fluffy dough. Finally add the ground grains of mechlepi and mastic.
We roll the dough to the thickness we want and to the size we want our flaunes to have.
After adding the sesame on a towel, place the dough on the sesame and press it so that it sticks on. Next, we put the desired filling dose depending on the size of the dough. Fold the edges inwards and press the corners with a fork. We give the flaunes a square shape with the central part being uncovered.
Place the flaunes in a lightly floured pan, spread them with the beaten egg, and sprinkle them with a little sesame.
We put the pan in the oven for 20 minutes at low temperature so they can rise and then at medium temperature until golden brown for about 40-50 minutes.
Tips
It is suggested to prepare our stuffing 3-4 hours before we start making the dough.
