Christmas Cake

Made with Plain Flour

Ingredients:

  • 1 ½ Glasses Plain Flour Triumph
  • 1 Glass of Brown Sugar
  • 1 Glass of Unsalted Butter
  • 1 Tablespoon Black Treacle
  • 3 ½ Glasses Cut Spoon Sweets (walnut, citrus, cherries)
  • 1 Glass Almonds and Walnuts
  • 1 Pinch of Salt
  • ½ Teaspoon Mixed Spices
  • ½ Teaspoon Cinnamon
  • ½ Teaspoon Ginger
  • 1 Cognac shot
  • Lemon zest

Method:

Prepare the pan with two layers on the bottom and the sides with wax paper.

Beat the butter together with the sugar very well until frothy. Continue beating, adding the black treacle and salt.

Add the eggs one by one.

Sift the flour and add the spices.

Add the sweets and the finely ground walnuts and almonds to the butter mixture. Finally add the flour.

Put the mixture in the pan and bake in a preheated oven at 150°Ⅽ for 2 - 2 ½ hours.

Shower the cake with cognac once a day, covering it to keep it moist.

Decorate the cake before the Christmas day with almond paste and icing.
