Spaghetti Espressi w/ Vegetable Sauce
Made with Spaghetti Espressi
Ingredients:
- 1 Package of Triumph Spaghetti Espressi
- 1/4 Glass of Olive Oil
- 1 Red Pepper
- 1 Green Pepper
- 2 Pumpkins Cut into Cubes
- 2 Eggplants Cut into Cubes
- 3 Cloves Garlic
- 1/2 Glass Black Seedless Olives
- 1 Tablespoon Sugar
- 800g Chopped Tomatoes (about 2 cans)
- 1 Vegetable Cube
- Some Oregano
- Some Parsley
- Salt
- Pepper
Method:
Put the olive oil in a large saucepan and sauté the garlic.
First add the eggplants, pumpkins, peppers, a little oregano and sugar. Then add the remaining ingredients.
Let the sauce set and after cooking the pasta according to the instruciton on the pack, drain and serve with the sauce on top.
